Meet Marco Salvestrin, the head chef here at Southern Highland Winery.
Marco is developing a menu that pairs perfectly with the wines produced at the SHW vineyard.
“What we are trying to do is embrace that connection between the traditional Italian cooking here at the restaurant and the winery”
Local produce is a BIG focus. Marco sources vegetables grown locally, catches yabbies from a nearby dam, and works with local Highlands farmers to also provide meat such as rabbit and quail.
Marco wants people to enjoy their dining experience at Southern Highland Winery and to take their time to savor the delicious cuisine.
“When people come through here, they are looking to have a wonderful experience, they want to sit down, relax and enjoy a glass of wine. This is what fine food experience is all about. Food should never be rushed. Food takes time to grow and time to cook.”
Marco started his culinary career in an Italian trattoria, and has worked with many Italian chefs as well as working with several fine Sydney restaurants when he first moved to Australia.
But, none of these chefs had as much of an impact on him than his biggest inspiration… his mother.
“I learned more cooking from my mother than any other chef in Italy.”
Marco moved to the Southern Highlands about a year ago. “It is such a good environment, good people and the Southern Highlands is a beautiful and quiet place to live. When I came here the first time it reminded me of my hometown.”

Marco also hosts monthly Italian cooking demonstrations which also includes a wine talk, plus tour of the winery with our very own winemaker Eddy Rossi, and dinner.
