Our Executive Chef is Emilio Broso. Born in Sicily, Emilio has kitchen life flowing through his veins. Emilio grew up working in his family’s Italian restaurant since the age of 8, being a Chef is not only a passion but a lifestyle he loves. This passion can be seen in Emilio’s dishes. Emilio uses local produce when available and enjoys working with seafood, rabbit and quail. He makes his own pasta, gnocchi and conducts monthly cooking classes.
When Emilio was 18 he wanted to discover a different regional style of cooking where he moved to Rome. Now with a taste of learning new techniques, styles and skills he explored further afield and worked in London, Amsterdam, Malaga, Sydney and Canberra. He returned to Italy for a short time before making Australia his new home.
Emilio describes his food as authentic Italian with a modern twist to cater for the Australian palette. “We are so lucky to be in a country that offers amazing produce and so many international cuisines. My wife who is South Korean and we are proud to be living in a beautiful part of Australia and feel blessed everyday”. Emilio works with Eddy Rossi (Head Winemaker) at Southern Highlands Winery to create dishes that compliment Cool Climate Wines.
